Cabbage Rolls
A famous Canadian comedy troupe used to sing, “cabbage rolls and coffee, mmm, mmm, good!” Well, there is good reason for that as you likely already know. This dish is just plain old comfort food that actually supports your HCG friendly menu perfectly. Cabbage is great for your overall gut health as it is a natural probiotic. Make sure to use “low sodium beef broth” with this recipe though.
  • 3.5 ounces organic lean ground beef
  • 1 cup low sodium beef broth
  • 1 tablespoon organic onion, chopped
  • 1 clove organic garlic crushed and minced
  • 1/2 teaspoon dried thyme
  •   sea salt and fresh ground pepper to taste
Preparation Steps
  • preheat oven to 375
  • lightly blanch 2 large cabbage leaves in boiling salted water for a few minutes
  • remove cabbage from the water and set aside to cool
  • finely chop the onion and crush the garlic
  • combine the ground beef, onion, garlic and thyme in small frying pan
  • dry fry until browned
  • season with sea salt and pepper
  • spoon the mixture into the cooled cabbage leaves
  • tuck the ends in and roll them up ( keep it closed by inserting a couple of toothpicks in the ends )
  • pour the cup of beef broth into a small baking dish
  • add the cabbage rolls and brush lightly with the broth
  • bake for 20 - 30 minutes
  • spoon sauce over cabbage rolls periodically to keep them nice and moist
  • plate one cabbage roll per serving
  • garnish with slice of fresh lemon and a sprig of fresh parsley
