You don’t actually “cook” traditional ceviche, rather, it “cooks itself” in the citrus juices. However, for this particular recipe we actually steam the fish first. Both methods turn the color of the fish from translucent pink to an opaque white.


If you are following the HCG Protocol program, you can roll this tasty concoction up in lettuce or cabbage leaves and enjoy. Should you wish to take a “choice day” on this one, you can use warmed soft tortilla shells to make a very tasty dish.

  • 4 ounces chilled cooked white fish or shrimp
  • 3 tablespoons fresh lemon or lime juice
  • 1/2 cup organic tomatoes, diced
  • 1 small organic red onion, finely sliced
  • 1 clove garlic, crushed and minced
  • small bunch cilantro, chopped
  • dash of hot sauce
  • pinch of sea salt and black pepper ( or to taste )
  • 4 leaves romaine or butter lettuce
Preparation Steps
  • steam the shrimp or fish
  • add lemon, onion, garlic and chopped cilantro
  • stir in diced tomatoes and hot sauce
  • chill and marinate covered in the refrigerator
  • serve on a bed of lettuce
  • garnish with a sprig of fresh parsley
