Curried Chicken Salad
Nobody knows how to build a better curry than our man, Nigel Wakelen – he is a Brit don’t ya know … This recipe may look a bit complex at first but is actually very easy to prepare. You will quickly learn how to build your own “tasty curry” and will become a huge fan in no time.
  • 3.5 ounces organic chicken breast, diced
  • 1/2 an organic green apple, diced
  • 1 stick organic celery, diced ( optional )
  • 1/4 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon organic onion, finely minced
  • 1 clove organic garlic, crushed and minced
  • 1 inch of fresh organic ginger, minced
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin
  • 1/2 teaspoon tumuric
  • 1/4 teaspoon kashmire chili powder
  • 1/4 teaspoon cinnamon
  •   Stevia to taste
  •   sea salt to taste
Preparation Steps
  • in a small saucepan lightly sauté the chicken in lemon juice
  • add the garlic and onion until browned
  • add the water and all of the spices and combine well
  • reduce the heat and simmer the dish until reduced
  • remove from the heat and chill
  • just before serving, add the green apple and celery
  • serve it up on a bed of green leaf lettuce
  • garnish with green apple slices
