HCG Friendly Shepherd’s Pie

This recipe is quick to make, ultra low fat, low glycemic, dairy and gluten free.
We created this recipe for Venus while she is on the Dr. Dave HEALTH HCG Program.
If you want pure comfort food that is hard to even think of as healthy, here is your dish!
Ingredients
  • 1 large head Fresh Cauliflower
  • 0.5 lbs Organic Baby Carrots
  • 1/2 cup Fresh Italian Flat Leaf Parsley
  • 6 sprigs Fresh Thyme
  • 1/4 cup Worcestershire Sauce
  • to taste Salt and pepper
  • to thicken the consistency, add some Agar
  • 1.5 lbs 93% Lean Ground Beef
  • 1 quart Organic Beef Stock
  • 1 quart Organic Chicken Stock
  • 2 medium Onions
Preparation Steps
  • Peel and fine chop onions.
  • Wash and break cauliflower into florets.
  • Slice baby carrots.
  • Wash, dry and chop Parsley.
  • Pull leaves off Thyme.
  • Saute beef with onions until just cooked, drain and press out fat through a mesh colander.
  • Boil cauliflower in chicken stock, salt and pepper to taste until almost mush, drain and mash for crust.
  • Add hot beef stock to beef, carrots, herbs, Worcestershire, salt and pepper and place into casserole baking dish (we love cast iron bakeware).
  • Top with mashed cauliflower and bake in preheated 425 oven.
  • Cook for 45 minutes and top brown crust with broiler at the end.
  • Let cool a bit before serving, garnish with fresh sprigs of thyme.
