This absolutely delicious, easy to make recipe is a winner even in an Italian household.

Ingredients
  • 1.5 lbs 93% lean beef
  • 2 medium Onions
  • 2 Tablespoon Garlic powder
  • 1 Quart Organic Chicken Stock
  • 4 medium Zucchini
  • 28 ounces Crushed Tomatoes
  • 1/4 cup Fresh Oregano Leaves
  • 1/4 cup Flat Leaf Parsley
  • To taste Salt and Pepper
  • 1/4 Teaspoon Crushed Red Pepper
Preparation Steps
  • Saute, drain and press fat out of cooked beef.
  • Add crushed tomatoes, all herbs and ingredients (except the chicken stock and zucchini). Cook on low heat for at least 30 minutes.
  • Wash and make the zucchini noodles (you need a zucchini noodler or can buy pre-made noodles.
  • Heat chicken stock, add salt and pepper. Cook zucchini noodles until just tender.
  • Drain noodles, place sauce on top, garnish with fresh herbs. Mangia!
