Peppered Veal Napolitana
Veal from young male “bull” calves and is known for its tenderness and light flavor. Veal is somewhat more expensive than its beef counterpart however with this HCG friendly recipe you only need a small amount to create this tasty dish. Traditional Veal Napolitana has cheese and prosciutto but that would add non HCG friendly components to this recipe.
  • 3.5 ounces organic lean veal meat
  • 1 medium organic tomato
  • 1 clove organic garlic, crushed and minced
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon basil ( fresh or dried )
  • 1/8 teaspoon oregano ( fresh or dried )
Preparation Steps
  • trim any visible fat off of the veal
  • preheat a non-stick pan
  • season both sides of the veal with the sea salt and black pepper
  • once the pan is hot add the veal
  • sear both sides of the veal until cooked to your preference
  • dice the tomato into chunks
  • cook the tomato chunks with the garlic and herbs
  • mash the tomato mixture to a near pulp
  • plate the veal and top with the tomato mixture
  • serve with a sprig of fresh basil and slice of fresh lemon
