The word “Florentine”, in culinary speak, simply means a “dish containing spinach” or prepared in the style of “the Florentine region of Italy”. We can thank Catherine de Medici for introducing it to the French. It is the spinach that really makes this dish come alive. Spinach is as delicious as it is healthy for you as it contains vitamins, antioxidants and minerals.
Ingredients
  • 1 free range egg and the whites of 3 more
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup organic baby spinach
  •   sea salt and ground pepper to taste
Preparation Steps
  • beat the eggs
  • add the seasoning
  • stir in the baby spinach
  • pour mixture into hot pan and scramble
  • season with sea salt and black pepper
  • hint: add a few drops of ice cold water when beating eggs to "fluff them up"
